Yotam Ottolenghi Recipe I

Plenty is a cook book I've been meaning to use for over a year.  It's written by Yotam Ottolenghi and has all vegetable recipes.  This week I finally cracked open the cookbook and made his recipe for roaster parsnips and sweet potatoes with caper vinaigrette.  The recipe was easy enough to make and turned out really well.  I made it to go with halibut, a nice white fish that my sister Lucy suggested.  The only drawback of this recipe was that it took a little over an hour to cook the vegetables.  I think the end result was worth the long cook time.  It was delicious, not difficult to make, and was great as leftovers.  I am really looking forward to making more of his recipes in the coming months.  Also, Yotam mentions this recipe can be made with cauliflower, which sounds like fun!

Fun fact of the day: when I was buying groceries for this recipe Tina Fey was on the checkout line behind me at Fairway Market!  It was cool seeing her in person after recently seeing her in the movie Sisters.
